Spring is the leanest time of the year with winter supplies running short and gardens yet to produce. But the early to late fall – harvest time – is the most bountiful and joyous season. The harvest that began in August does not really end until later in October. The sun is quite literally setting on the garden season as the days grow shorter and cooler. The cereal grains such as oats, wheat, and corn are brought in, vegetables too, along with apples, picked and put-up for the winter. A variety of root vegetables, such as turnips, potatoes, and beets, are dug up and stored in stone-lined pits to prevent hard freezing. And with the late corn already collected only the last of the beans and the slow ripening squash and pumpkins remain among the brown and brittle stalks.
